Inside Out Pie
Okay, this was a bit of an experiment for me. Usually I have a big enough piece of beef to wrap around the filling and tie off...
I rubbed some Crisco onto the inside of a meatloaf pan, lined it with strips of rump, then powdered the inside of the strips and the joins with a mixture of flour, salt, pepper, paprika, oregano, and basil.
The filling is diced potatoes, carrots, onions and some cheese. All I had was Double Gloucester, and it didn't melt as I wanted it to.
I placed a final piece of beef on the top, and seasoned with basil, oregano, salt, pepper, and paprika, and sprayed with olive oil.
Baked it on a high heat for about twenty-five minutes.
And here it is:

I'll make you something yummy in return, or take you to dinner. ;)
Tonight I prepared a lovely pecan encrusted chicken, parmesan mushroom risotto, and fresh string beans with red peppers topped with toasted pine nuts. I have a food hang over.
