The first proof of evolution was when humans learnt to selectively breed plants and animals for certain desired characteristics. Ironically enough it was the priest Gregor Mendel who conclusively demonstrated genetic inheritance and showed that plants and animals were not limited to one form, but that they could change over time.

You seem very set on "viruses" being the answer. :P But that's just 'cause they're very highly adaptable to hostile conditions (i.e., immune systems). And i think that's really the greatest proof of evolution: Adaptability.
The more an organism can adapt to its environment as it changes, the more chance it has to live. Natural selection at work! :)
i always went with the webbing between fingers and toes. as land-based, non-amphibious creatures, it's completely extraneous on humans, and yet, there it is.
The greatest proof of evolution is dogs. In the course of human history we have, through selective breeding, changed the shape of breeds of dogs to suit our purposes. Evolution not only exists but apparently we can fuck with it ;]
