I usually throw about every veggie in the 'fridge into my faux omelette. Fresh sage when I have it or I settle for dried. Minced garlic, datil pepper and then some feta or sharp cheddar. The trick is not to overcook them and turn them into a wad of rubber.
Side of lightly buttered toast with 1/2 caff coffee.
You just had to make it a question about food, didn't you? LOL!
Okay - Since I have a choice in how eggs are cooked, this is how I typically like them:
1. Scrambled - Add milk to the eggs, and dill weed... 2. Fried - Over Medium. I like to have runny yolk to dip my meat into. (Wow, that sounds dirty) 3. Omelett - I like it with bacon & sausage, cheese, mushrooms, onions, green peppers and if they have them, cajun spices.
Any and all of the above should be served with bacon/sausage, cheese grits, fresh fruit and buttery biscuits with a side of fresh coffee. And go ahead and serve it up in bed...::wink::
over easy with a nice runny yolk for dipping hash browns. check that, make it home fries. side of biscuits and sausage gravy, side of grits. glass of raspberry iced tea.

I never used to like eggs when I was a kid. When we went to visit my grandmother, she would always cook a huge breakfast -- bacon, eggs, sausage, toast, sometimes pancakes or waffles -- and I would generally turn up my nose and ask for Cheerios, milk no sugar (yes, I was a strange child)
Even things that require eggs, like quiche, I made with just enough eggs to hold it all together. [I like quiche deep dish, with big cubes of ham and lots of gooey cheese), and those eight eggs I add just seal up the cracks, LOL.
However, in recent years I have gone on a breakfast binge. Bryan can usually twist my arm into making pancakes, because it is a little easier, but my cravings run more toward fried eggs, or the occasional faux omelette, with peppers and onions if I have any on hand, mushrooms, cheese, sometimes salsa if I'm not sharing. The BEST though, is to slather cream cheese in the middle, throw in a bit of canned crab or some leftover seafood if I have any on hand (which is mainly never), then slather it all with a little bit of that red sweet and sour sauce from the Chinese restaurant that they provide in quantity with the little fried pork balls. It sounds disgusting, but it is _yummy_ (and I actually thought it up in my pre-pregnancy days, LOL!)
