It depends on two things: the giver of said compliment and my own feelings about the compliment itself. If I respect and trust the giver, I try to respond in a gracious and appreciative way, because I truly value their praise and it makes me happy. If I don't know/trust/respect the person, I either just nod and smile or say "thank you". (Depending on the degree of familiarity I have with them.)
If I don't really believe the statement of the compliment myself, I might deny a few times before accepting it (even if I still don't really believe it).
